Vegan Chocolate Peanut Butter Protein Cookies
These cookies really curb my chocolate craving and are super high in protein, making them and ideal vegan snack!
Ingredients
-60g vegan vanilla protein powder (I use @sfnutrition)
- 1/4 cup erythritol
- 2.5 tablespoon cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 tbsp ground chia seeds (soaked in 2 tbsp warm water)
- 3 tbsp coconut oil
- 3 tbsp vegan yoghurt
- 1/4 cup peanuts
- 3 tbsp plant milk
Method
Mix all dry ingredients together (except peanuts)
Add in wet ingredients then fold in peanuts
Bake for 10-12mins at 180C
