Vegan Chocolate Peanut Butter Protein Cookies

These cookies really curb my chocolate craving and are super high in protein, making them and ideal vegan snack!

These cookies really curb my chocolate craving and are super high in protein, making them and ideal vegan snack!

Ingredients

-60g vegan vanilla protein powder (I use @sfnutrition)⁣
- 1/4 cup erythritol⁣
- 2.5 tablespoon cocoa powder⁣
- 1/2 teaspoon salt⁣
- 1 teaspoon cinnamon⁣
- 1 teaspoon baking powder⁣
- 1 tbsp ground chia seeds (soaked in 2 tbsp warm water) ⁣
- 3 tbsp coconut oil ⁣
- 3 tbsp vegan yoghurt ⁣
- 1/4 cup peanuts ⁣
- 3 tbsp plant milk

Method

  1. Mix all dry ingredients together (except peanuts) ⁣

  2. Add in wet ingredients then fold in peanuts⁣

  3. Bake for 10-12mins at 180C ⁣
