Baked Pumpkin Doughnuts

Do you agree that pumpkin spice makes everything nice? ⁣🎃⁣

The icing for these babies is made from mixed protein powder with light cream cheese or thick greek yoghurt!

Ingredients

4 large eggs⁣
6 tbsp pumpkin puree⁣
1/2 cup almond flour ⁣
1/2 cup vegan vanilla protein powder (I use @sfnutrition)⁣
1/2 cup erythritol (sub for any other granulated sweetener)⁣
1 tsp pumpkin spice⁣
1 tsp baking powder ⁣
1/2 tsp salt⁣

Method

1. Combine and mix dry ingredients ⁣
2. In a separate bowl whisk the egg whites and pumpkin puree together⁣
3. Add wet mix to dry mix and stir to combine⁣
4. Grease a doughnut tin and bake for 12 mins at 180C/350F⁣
