Baked Pumpkin Doughnuts
Do you agree that pumpkin spice makes everything nice? 🎃
The icing for these babies is made from mixed protein powder with light cream cheese or thick greek yoghurt!
Ingredients
4 large eggs
6 tbsp pumpkin puree
1/2 cup almond flour
1/2 cup vegan vanilla protein powder (I use @sfnutrition)
1/2 cup erythritol (sub for any other granulated sweetener)
1 tsp pumpkin spice
1 tsp baking powder
1/2 tsp salt
Method
1. Combine and mix dry ingredients
2. In a separate bowl whisk the egg whites and pumpkin puree together
3. Add wet mix to dry mix and stir to combine
4. Grease a doughnut tin and bake for 12 mins at 180C/350F
