Ginger Molasses Cookies
These cookies are soft chewy & warming, perfect for the holiday season.
Ingredients
1 cup oat flour (just blend oats on food processor or blender)
1 tbsp coconut flour or flax meal
1 tsp baking powder
1/2 tsp ginger
1/4 tsp cinnamon
1/2 tsp salt
1 small cup of dates (soaked in hot water)
1/4 cup coconut oil (melted)
1 tbsp molasses
Method
1.Blend oats in food processor and add all dry ingredients, blend until combined.
2. Add wet ingredients until a sticky batter forms.
3. Scoop out 6 balls with an ice cream scoop onto a parchment covered tray and then flatten with the back of a spoon.
4. Bake for 12 mins at 350/180.
