Ginger Molasses Cookies

These cookies are soft chewy & warming, perfect for the holiday season.

Ingredients

  • 1 cup oat flour (just blend oats on food processor or blender)

  • 1 tbsp coconut flour or flax meal

  • 1 tsp baking powder ⁣

  • 1/2 tsp ginger ⁣

  • 1/4 tsp cinnamon⁣

  • 1/2 tsp salt⁣

  • 1 small cup of dates (soaked in hot water)⁣

  • 1/4 cup coconut oil (melted) ⁣

  • 1 tbsp molasses⁣

Method

1.Blend oats in food processor and add all dry ingredients, blend until combined.⁣
2. Add wet ingredients until a sticky batter forms. ⁣
3. Scoop out 6 balls with an ice cream scoop onto a parchment covered tray and then flatten with the back of a spoon. ⁣
4. Bake for 12 mins at 350/180.
