3- Ingredient Vegan Shortbread Cookies

Enjoy with tea, coffee, hot chocolate or a big glass of oat milk 🥛

Ingredients

-1.5 cups almond flour (packed) ⁣
- 3 tbsp coconut oil (melted) ⁣
- 3 tbsp maple syrup⁣


Optional Ingredients (I added them all!)⁣
1/4 tsp salt ⁣
1 tsp vanilla extra⁣
Vegan chocolate for topping ⁣

Method

1.Mix all ingredients in a bowl until combined (except chocolate) ⁣
2. Shape into balls about the size of a tennis ball making sure they’re packed together (they might feel a bit crumbly but that’s okay) ⁣
3. Place on baking sheet and flatten slightly with the back of a spoon (you can make them as thick or thin as you’d like but I like mine thicker) ⁣
4. Press chocolate into the top of the cookies ⁣
5. Bake for 12-15 mins at 350/180, or until bottom is golden brown ⁣
6. Let sit for 5 mins then transfer to a cooling rack ⁣
