Turmeric Noodles
These anti-inflammatory noodles are a great meal prep recipe and are gluten and dairy free!
Ingredients
400ml light coconut milk
200g broccoli or green beans
1 large bell pepper
1 onion
2 garlic cloves (minced)
Juice of 1/2 a lime
2 tbsp turmeric
1/2 tsp cumin
1/2 tsp ginger
1/4 tsp cardamom
1/4 tsp gar masala
1/4 tsp coriander powder (or use 2 tbsp fresh coriander)
Lots of salt + pepper
90g rice noodle
250g prawns
Method
1. Chop vegetables and sauté until onions are browned then add shrimp and cook for 1-2 minutes more.
2. In a separate bowl sauté garlic over medium heat and add coconut milk and whisk in the lime juice and all the spices
3. Boil water and pour over noodles until tender.
4. Add sauce and noodles to pan with veg, simmer down the sauce for a few minutes and then serve!ingredients then fold in peanuts 5.Bake for 10-12mins at 180C
