Turmeric Noodles

These anti-inflammatory noodles are a great meal prep recipe and are gluten and dairy free!

Ingredients

400ml light coconut milk ⁣
200g broccoli or green beans ⁣
1 large bell pepper ⁣
1 onion ⁣
2 garlic cloves (minced) ⁣
Juice of 1/2 a lime ⁣
2 tbsp turmeric ⁣
1/2 tsp cumin⁣
1/2 tsp ginger ⁣
1/4 tsp cardamom ⁣
1/4 tsp gar masala ⁣
1/4 tsp coriander powder (or use 2 tbsp fresh coriander) ⁣
Lots of salt + pepper ⁣
90g rice noodle ⁣
250g prawns ⁣

Method

1. Chop vegetables and sauté until onions are browned then add shrimp and cook for 1-2 minutes more. ⁣
2. In a separate bowl sauté garlic over medium heat and add coconut milk and whisk in the lime juice and all the spices⁣
3. Boil water and pour over noodles until tender. ⁣
4. Add sauce and noodles to pan with veg, simmer down the sauce for a few minutes and then serve!⁣ingredients then fold in peanuts⁣ 5.Bake for 10-12mins at 180C ⁣
