One Pan Baked Chicken Rice

This is one of my favourite easy and healthy meal prep recipes! ⁣

Ingredients

400g raw chicken breast ⁣
200g dry rice ⁣
100g chorizo ⁣
200g cherry tomatoes ⁣
200g bell pepper ⁣
2 cups spinach ⁣
400g tomato sauce ⁣
500ml chicken stock ⁣
Salt + pepper ⁣

Method

  1. Combine and mix all ingredients into a pan and bake at 180C/350F for 60 minutes, or until rice is fluffy and chicken is cooked through. ⁣
