One Pan Baked Chicken Rice
This is one of my favourite easy and healthy meal prep recipes!
Ingredients
400g raw chicken breast
200g dry rice
100g chorizo
200g cherry tomatoes
200g bell pepper
2 cups spinach
400g tomato sauce
500ml chicken stock
Salt + pepper
Method
Combine and mix all ingredients into a pan and bake at 180C/350F for 60 minutes, or until rice is fluffy and chicken is cooked through.
