Pumpkin Protein Muffins
These low calories muffins taste delicious slathered in nut butter or as a great snack on the go!
Ingredients
3/4 cup flour ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup vegan vanilla protein ( I use @sfnutrition) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/3 cup granulated sweetener of choice (I use erythritol) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup jumbo oats ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp pumpkin spice ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp baking powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 tsp salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 large egg ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/3 cup plain 0% Greek yoghurt ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup pumpkin puree ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 tbsp maple syrup ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/3 cup milk of choice ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp chia seeds ⠀
Method
1. Mix all dry ingredients in one bowl and all wet in another ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Add wet to dry and mix ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Stir in chia seeds ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Add to muffin in and bake for 20 mins at 180C/350F - or until a toothpick comes out clean ⠀⠀
