Pumpkin Protein Muffins

These low calories muffins taste delicious slathered in nut butter or as a great snack on the go!

Ingredients

3/4 cup flour ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup vegan vanilla protein ( I use @sfnutrition) ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/3 cup granulated sweetener of choice (I use erythritol) ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup jumbo oats ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp pumpkin spice ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp baking powder ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 tsp salt ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 large egg ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/3 cup plain 0% Greek yoghurt ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup pumpkin puree ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 tbsp maple syrup ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/3 cup milk of choice ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp chia seeds ⁣⠀

Method

1. Mix all dry ingredients in one bowl and all wet in another ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Add wet to dry and mix ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Stir in chia seeds ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Add to muffin in and bake for 20 mins at 180C/350F - or until a toothpick comes out clean ⁣⠀⠀
