Protein French Toast

French toast, or eggy bread? Whichever one you say this one is delicious AND high in protein!

Ingredients

  • 2 slices sourdough bead (I used “Jason’s” from M&S)

  • 1 large egg

  • 2 large egg whites

  • 1/2 tsp cinnamon

  • 1 tsp vanilla extract

Method

  1. Heat pan to a medium heat.

  2. Whisk egg and egg whites together in a bowl and add cinnamon and vanilla extract ( I add a pinch of salt but this optional).

  3. Add one slice of bread to the bowl, allowing it to soak up the egg mixture, flip halfway through and repeat with other bread slice

  4. Add to pan and flip after a few minutes, or when one side is lightly browned

  5. Top with greek yoghurt, syrup, berries, seeds, nuts etc.
