Kale & White Bean Tacos

Combining kale and white beans means OPTIMAL IRON absorption for vegans/veggies as the beans contain iron and the kale vitamin c (plus a bit of iron also!). The picked cabbage is also great for gut health! ⁣Hot tip: add greek yoghurt and/or chicken for a protein boost!

Ingredients

  • 1/2 cup white beans

  • 3 cups kale

  • 3 garlic cloves, minced/finely chopped/grated

  • 1 tbsp olive oil

  • 1/4 cup pickled cabbage

  • 4 small flour and/or corn tortillas

Method

  1. Sautee kale in olive oil and with garlic until soft

  2. Warm up tortillas on a pan or in microwave

  3. Add beans, kale, and pickled cabbage onto each tortilla and enjoy!
