Perfect Protein Cookies

Chewy, gooey, and delicious. These cookies have less than 7g of carbs per cookie and almost 10g of protein! It's a double win I think.

Ingredients:⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼1/8 cup coconut flour⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼1/3 cup erythritol⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼1/4 cup vegan protein powder ( I use @sfnutrition)⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1/4 cup collagen⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼1 tsp baking powder⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼1/4 tsp salt⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1 large egg⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 3 tbsp peanut butter⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 2 tbsp 70% dark chocolate chips ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀

Instructions: ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Mix all dry ingredients (except chocolate chips) in a bowl⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. In a separate bowl mix together wet ingredients then combine with dry mix ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Fold through chocolate chips⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Bake for 10 minutes at 170C (do not over-bake!) I like having them right out of the fridge for maximum chewiness!⠀⠀⠀⠀⠀⠀⠀⠀⠀
