Perfect Protein Cookies
Chewy, gooey, and delicious. These cookies have less than 7g of carbs per cookie and almost 10g of protein! It's a double win I think.
Ingredients:⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼1/8 cup coconut flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼1/3 cup erythritol⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼1/4 cup vegan protein powder ( I use @sfnutrition)⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1/4 cup collagen⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼1 tsp baking powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼1/4 tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1 large egg⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 3 tbsp peanut butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 2 tbsp 70% dark chocolate chips ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Instructions: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Mix all dry ingredients (except chocolate chips) in a bowl⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. In a separate bowl mix together wet ingredients then combine with dry mix ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Fold through chocolate chips⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Bake for 10 minutes at 170C (do not over-bake!) I like having them right out of the fridge for maximum chewiness!⠀⠀⠀⠀⠀⠀⠀⠀⠀
