Healthy Bolognese
Bolognese🍝 is one of my favourite comfort foods and like many children think- my mama makes it best. It’s also filled with a TON of veggies and is high in protein! I love having it over zoodles or protein pasta. Give it a try, it’s great to freeze and will make your kitchen smell AMAZING!
Ingredients
➼2 tbsp of olive oil
➼ 1 onion
➼ 1tbsp of mixed dried herbs
➼Red pepper flakes to taste
➼ 3 cloves garlic, chopped
➼ 3 cups chopped veg. of choice (mushrooms, carrot, pepper, celery)
➼ 2 cups spinach
➼ S+p to taste
➼ 1lb/.5 kilo minced meat of choice (I use turkey)
➼ 28oz can of crushed tomatoes
➼ ¼ cup fresh basil
➼ A few dashes of Worcester sauce
Method
Add oil to coat bottom of large pot and heat over med to high heat
Lower heat slightly, add onions and cook until soft and opaque. Be careful they do not brown.
Add dried herbs add chopped veg. and cook for 5 mins
Add minced meat and fry until no longer pink
Add tomatoes and bring to the boil, lower heat and simmer for 20-30mins
Add Worchester, garlic, and s+p
A minute before serving add baby spinach and fresh basil
