Healthy Pad Thai

A lighter, healthier version of pad thai with an incredible and easy sauce.

Ingredients

400g raw chicken breast ⁣​​​​​​​​
2 large eggs ⁣​​​​​​​​
300g bell pepper ⁣​​​​​​​​
300g bean sprouts or broccoli ⁣​​​​​​​​
135g rice noodles ⁣​​​​​​​​
Handful coriander/cilantro ⁣​​​​​​​​


⁣​​​​​​Sauce

1 tablespoon peanut butter⁣​​​​​​​​
2 tablespoons honey⁣​​​​​​​​
2 tablespoons lime juice⁣​​​​​​​​
1.5 tablespoons rice wine vinegar⁣​​​​​​​​
2 tablespoons fish sauce⁣​​​​​​​​
¼ cup soy sauce⁣​​​​​​​​

Method

1.Sauté chicken and veg on a pan until cooked through. ⁣​​​​​​​​
2. Blend sauce ingredients and then add to pan. ⁣​​​​​​​​
3. Boil noodles then add to the pan and mix ingredients together ⁣​​​​​​​​
