Lemon Blueberry Muffins
Looking for a weekend bake? This is it! Low carb and high protein, you can’t go wrong!
Ingredients
1/2 cup blanched almond flour
1/2 cup vanilla protein powder (I used a vegan one)
1/4 cup collagen
1/3 cup sugar-free sweetener (I always use erythritol)
1 tsp baking powder
1/4 tsp salt
2 large eggs
3 tbsp melted butter or coconut oil
juice from one large lemon
0.5 tbsp lemon rind
1/2 cup blueberries
Method
Mix dry ingredients together then add wet ingredients
Once combined fold through the blueberries and bake for 15-20 minutes at 180C or 350F.
