Lemon Blueberry Muffins

Looking for a weekend bake? This is it! Low carb and high protein, you can’t go wrong!

Ingredients

  • 1/2 cup blanched almond flour

  • 1/2 cup vanilla protein powder (I used a vegan one)

  • 1/4 cup collagen

  • 1/3 cup sugar-free sweetener (I always use erythritol)

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 2 large eggs

  • 3 tbsp melted butter or coconut oil

  • juice from one large lemon

  • 0.5 tbsp lemon rind

  • 1/2 cup blueberries

Method

  1. Mix dry ingredients together then add wet ingredients

  2. Once combined fold through the blueberries and bake for 15-20 minutes at 180C or 350F.
