Keto Coffee Cake Muffins

The perfect keto side to your morning cup of coffee!

Ingredients

Muffin Base

  • 1/3 cup coconut flour

  • 1/3 cup sugar-free sweetener (I always use erythritol)

  • 2 tsp cinnamon

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 4 large eggs

  • 1/3 cup melted butter or coconut oil

Cinnamon Swirl

  • 4 tbsp cinnamon

  • 4 tbsp erythritol

  • 4 tbsp melted coconut oil

Method

  1. Combine all Muffin Base wet ingredients and all dry ingredients in two separate bowls then combine

  2. Combine all Cinnamon Swirl ingredients into a bowl and mix. ⁣⠀

  3. Pour half the batter into 6 muffin moulds then add half the cinnamon swirl mix on top. Repeat until you have 6 muffins with a cinnamon swirl in the middle and on top.

  4. Bake for 12-15minutes at 180C and enjoy with coffee or tea!
