Keto Coffee Cake Muffins
The perfect keto side to your morning cup of coffee!
Ingredients
Muffin Base
1/3 cup coconut flour
1/3 cup sugar-free sweetener (I always use erythritol)
2 tsp cinnamon
1/2 tsp baking powder
1/4 tsp salt
4 large eggs
1/3 cup melted butter or coconut oil
Cinnamon Swirl
4 tbsp cinnamon
4 tbsp erythritol
4 tbsp melted coconut oil
Method
Combine all Muffin Base wet ingredients and all dry ingredients in two separate bowls then combine
Combine all Cinnamon Swirl ingredients into a bowl and mix. ⠀
Pour half the batter into 6 muffin moulds then add half the cinnamon swirl mix on top. Repeat until you have 6 muffins with a cinnamon swirl in the middle and on top.
Bake for 12-15minutes at 180C and enjoy with coffee or tea!
