High Protein Chicken Fried Rice

This recipe is so easy, healthy & yummy,
PLUS, if you prep it and leave it in the fridge you will get gut-healthy resistant starch from the rice

Ingredients

200g chicken breast (I measured this raw) ⁣
1 microwave packet of microwave rice (or 250g cooked rice) ⁣
1 large egg ⁣
1 large bell pepper ⁣
3 spring/green onions ⁣
1/2 cup peas ⁣


Sauce
2 tbsp soy sauce (I ended up adding more) ⁣
1 tbsp sesame oil ⁣
1 tap garlic powder ⁣
Salt + pepper ⁣

Method

  1. Bake chicken in the oven at 180/350F until cooked through.

  2. Add vegetables to a medium heat pan and once soft add one egg and scramble with vegetables then add cooked microwave rice and chicken,

  3. Mix sauce ingredients together and then pour over all ingredients in the pan and mix together.
