Healthy Greek Potato Salad
Ingredients
➼ ½ kg of cooked then cooled potatoes, roughly chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1 bell pepper, roughly chopped⠀(you can substitute for cucumber) ⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1.5 cups cherry tomatoes, halved⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1 red onion, roughly chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1/3 cup goat feta cheese⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1/4 cup extra virgin olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 2 tbsp dried oregano⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ salt + pepper to taste (don’t be shy!)⠀⠀
