Healthy Greek Potato Salad

I’m a huge fan of cooked then cooled potatoes due to it having more resistant starch which is good for the gut and spikes glucose levels LESS. This potato salad is inspired by a Mediterranean way of eating (one of the healthiest diets in the world) as it combines fresh vegetables and healthy fats. Simply pair with a protein source (think chicken or tofu kebabs) and enjoy outside of a beautiful summer’s day! ☀️⁣

Ingredients

➼ ½ kg of cooked then cooled potatoes, roughly chopped⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1 bell pepper, roughly chopped⁣⁣⠀(you can substitute for cucumber) ⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1.5 cups cherry tomatoes, halved⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1 red onion, roughly chopped⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1/3 cup goat feta⁣ cheese⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1/4 cup extra virgin olive oil ⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 2 tbsp dried oregano⁣⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ salt + pepper to taste (don’t be shy!)⁣⁣⠀⠀

Method⠀⠀

Mix all ingredients in a bowl and serve!⠀
