Gluten Free Lemon Blueberry Muffins
These beauties are nice and fluffy thanks to oat flour, a really easy gluten free flour you can make from regular oats.
Ingredients
➼1 1/4 cups oat flour
➼3 tbsp coconut flour
➼1/4 cup granulated sweetener (I use erythritol)
➼2 medium eggs
➼ 1/3 cup grass-fed butter (melted)
➼juice and zest of 1/2 a lemon
➼3 tbsp honey/maple syrup
➼1/2 tsp baking powder
➼1/4 tsp salt
➼1/3 cup blueberries
Method
1. Preheat oven to 180C
2. Mix wet ingredients
3. In a separate bowl mix dry ingredients (except blueberries)
4. Combine ingredients then fold in blueberries
5. Bake for 15-20mins or until slightly golden brown
