Gluten Free Lemon Blueberry Muffins

These beauties are nice and fluffy thanks to oat flour, a really easy gluten free flour you can make from regular oats.⁣

Ingredients

➼1 1/4 cups oat flour⁣
➼3 tbsp coconut flour⁣
➼1/4 cup granulated sweetener (I use erythritol)
➼2 medium eggs ⁣
➼ 1/3 cup grass-fed butter (melted)⁣
➼juice and zest of 1/2 a lemon⁣

➼3 tbsp honey/maple syrup
➼1/2 tsp baking powder⁣
➼1/4 tsp salt⁣
➼1/3 cup blueberries⁣

Method

1. Preheat oven to 180C⁣
2. Mix wet ingredients⁣
3. In a separate bowl mix dry ingredients (except blueberries)⁣
4. Combine ingredients then fold in blueberries⁣
5. Bake for 15-20mins or until slightly golden brown⁣
