Birthday Cake Beet Brownies

The secret to these fluffy brownies is beets! The full recipe is made in the food processor, so no clean- up required!

Ingredients

  • 2 medium beets, cooked (approx 200g)

  • 2 tbsp water

  • 3 tbsp coconut oil, melted

  • 3 tbsp nut butter

  • 2 medium eggs

  • 1 tsp vanilla extract

  • 1/4 cup vegan vanilla protein powder

  • 1/2 cup granulated sweetener (I use erythritol to make them sugar-free)

  • 1/4 cup almond flour

  • 2 tbsp coconut flour

  • 3 tbsp cacao powder

  • 1/2 tsp baking powder

  • 1/4 tsp salt

Directions

  1. Pre-heat oven to 180C/350F

  2. Add beets to a food processor with water and blend until a rough puree had formed

  3. Add all wet ingredients to processor and blend

  4. Add all dry ingredients to processor and blend until well mixed (you made need to scrape down the sides with a spatula now and then)

  5. Add to an 8x8 brownie tin (or a smaller one if you want them to be thick, or in a round cake pan if you want to make a cake!)

  6. Bake for 12-15 mins, or until a toothpick comes out clean in the center

  7. Top with sprinkles for fun and enjoy out of the fridge for best texture
