15 Minute Shakshuka

Although restaurants will boast that it takes 2 hours and a whole oven to make proper shakshuka, this recipe is going to show you it’s not necessary!

Ingredients

  • 4 eggs

  • 1 red or white onion

  • 1 bell pepper

  • 3 garlic cloves

  • 2 cups of spinach

  • 1 can chopped tomatoes

  • 3 tbsp tomato paste

  • 2 tsp spicy harissa paste

  • 2 tbsp olive oil

  • 2 tbsp dried mixed herbs

  • 1 tbsp garlic granules

  • 1 tbsp onion granules

  • 1 tsp salt (or more to taste)

  • 2 tsp pepper (or more to taste)

Directions

  1. Heat a pan to medium heat on the stovetop and add olive oil

  2. Roughly chop onions and bell pepper and add to pan and sautee

  3. After 5 minutes add in garlic and sautee until just browned

  4. Add in all spices/herbs and tomato paste until all veggies are coated

  5. Add in in chopped tomatoes and harissa, mixing through

  6. Add in spinach and mix until wilted

  7. Make 4 wells in the mix and crack eggs into them

  8. Cover with lid and slightly lower down the heat and let simmer for approx. 7 minutes, or until eggs are just cooked

  9. Serve with toasted bread of choice!
