15 Minute Shakshuka
Although restaurants will boast that it takes 2 hours and a whole oven to make proper shakshuka, this recipe is going to show you it’s not necessary!
Ingredients
4 eggs
1 red or white onion
1 bell pepper
3 garlic cloves
2 cups of spinach
1 can chopped tomatoes
3 tbsp tomato paste
2 tsp spicy harissa paste
2 tbsp olive oil
2 tbsp dried mixed herbs
1 tbsp garlic granules
1 tbsp onion granules
1 tsp salt (or more to taste)
2 tsp pepper (or more to taste)
Directions
Heat a pan to medium heat on the stovetop and add olive oil
Roughly chop onions and bell pepper and add to pan and sautee
After 5 minutes add in garlic and sautee until just browned
Add in all spices/herbs and tomato paste until all veggies are coated
Add in in chopped tomatoes and harissa, mixing through
Add in spinach and mix until wilted
Make 4 wells in the mix and crack eggs into them
Cover with lid and slightly lower down the heat and let simmer for approx. 7 minutes, or until eggs are just cooked
Serve with toasted bread of choice!
