Vegan Oatmeal Choc Chip Cookies

These babies are gooey and chewy, like store bakery ones, are gluten free, contain no oil, and taste like HEAVEN! 🤤⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients
➼ 1 cup gf oats⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 30g vanilla vegan protein powder (I used @sfnutrition )⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1/2 tsp baking powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1/4 tsp salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼2 flax eggs (2 tbsp ground flax + 2 tbsp warm water and let stand for 5 mins)⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 1 ripe banana, mashed⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 3 tbsp maple syrup (or agave) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 2 tbsp nut butter ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
➼ 3 tbsp chocolate chips/chunks⠀⠀⠀
Method
1. Mix all dry ingredients in a bowl (except chocolate chips)⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. In a separate bowl mix all wet ingredients ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Combine wet and dry ingredients ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Fold in chocolate chips/chunks ⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Wet hands and roll into balls then flatten out onto baking sheet lined with parchment paper⠀⠀⠀⠀⠀⠀⠀⠀⠀
6. Bake for 10 mins at 180C/350F ⠀⠀⠀⠀⠀⠀⠀⠀⠀
7. Taste test while hot and let rest dry on a cookie rack!⠀⠀⠀⠀⠀⠀⠀⠀⠀
