One Pot Lemon Pasta
An easy weeknight meal that works well to incorporate leftover chicken and veg!
Ingredients
300g dried pasta of choice ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 red or white onion, diced ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 garlic cloves, diced ⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
240ml boiling water ⠀⠀⠀⠀⠀⠀⠀⠀⠀
400g tin of low-fat coconut milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
Zest of one lemon ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Juice of 1.5 lemons ⠀⠀⠀⠀⠀⠀⠀⠀⠀
200g green beans ⠀⠀⠀⠀⠀⠀⠀⠀⠀
300g chicken breast, cooked and cut into chunks ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt & pepper⠀⠀⠀⠀⠀
Method
1. Sauté onion + garlic in olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. One onions are translucent add water, coconut milk, lemon zest + juice and bring to a low boil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. And add pasta + beans and salt + pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Simmer it until pasta is cooked through and then add in chicken!
