One Pot Lemon Pasta

An easy weeknight meal that works well to incorporate leftover chicken and veg!

Ingredients

300g dried pasta of choice ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 red or white onion, diced ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 garlic cloves, diced ⁣⠀⠀⠀⠀⠀⠀⠀⠀
1 tbsp olive oil ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
240ml boiling water ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
400g tin of low-fat coconut milk⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
Zest of one lemon ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
Juice of 1.5 lemons ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
200g green beans ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
300g chicken breast, cooked and cut into chunks ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt & pepper⁣⠀⠀⠀⠀⠀

Method

1. Sauté onion + garlic in olive oil ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. One onions are translucent add water, coconut milk, lemon zest + juice and bring to a low boil ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. And add pasta + beans and salt + pepper ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Simmer it until pasta is cooked through and then add in chicken!
