Crispy Salmon with Lemon & Onion Couscous
Salmon has tons of healthy Omega-3's & protein. Couscous is super easy and fast to make and pair with other flavours.
Ingredients
4 fillets of salmon
0.5 tbsp olive oil
220g dry couscous
330ml boiling water
Juice of 1 lemon
4 stalks of spring/green onions
2 cups spinach - chopped
Salt + pepp
Crust
1/2 cup panko bread crumbs
1/4 cup grated parmesan cheese
2 tsp paprika
1 tbsp garlic granules
2 tbsp dried mixed herbs
salt + pepp
Method
1.In a bowl lightly mix together all crust ingredients.
2. Place salmon on a baking tray and brush or spray with olive oil and add crust mixture on top.
3. Add salmon to air fryer for 10 mins at 180C or over at same temp for 20 mins or until crust on salmon is golden brown.
4. In a pot add couscous, onions, spinach, s+p, and boiling water.
5. Cover and let sit for 10minutes or until couscous has soaked up all water, then add lemon juice and stir.
