Crispy Salmon with Lemon & Onion Couscous

Salmon has tons of healthy Omega-3's & protein. ⁣​​​​​​​​Couscous is super easy and fast to make and pair with other flavours⁣​​​​​​​​.

Ingredients

4 fillets of salmon ⁣​​​​​​​​
0.5 tbsp olive oil⁣​​​​​​​​
220g dry couscous⁣​​​​​​​​
330ml boiling water⁣​​​​​​​​
Juice of 1 lemon⁣​​​​​​​​
4 stalks of spring/green onions⁣​​​​​​​​
2 cups spinach - chopped⁣​​​​​​​​
Salt + pepp⁣​​​​​​​​

Crust

1/2 cup panko bread crumbs ⁣​​​​​​​​
1/4 cup grated parmesan cheese ⁣​​​​​​​​
2 tsp paprika⁣​​​​​​​​
1 tbsp garlic granules ⁣​​​​​​​​
2 tbsp dried mixed herbs ⁣​​​​​​​​
salt + pepp⁣​​​​​​​​

Method

1.In a bowl lightly mix together all crust ingredients. ⁣​​​​​​​​
2. Place salmon on a baking tray and brush or spray with olive oil and add crust mixture on top. ⁣​​​​​​​​
3. Add salmon to air fryer for 10 mins at 180C or over at same temp for 20 mins or until crust on salmon is golden brown. ⁣​​​​​​​
4. In a pot add couscous, onions, spinach, s+p, and boiling water. ⁣​​​​​​​​
5. Cover and let sit for 10minutes or until couscous has soaked up all water, then add lemon juice and stir. ⁣​​​​​​​​
