Creamy Protein Rice Bake

Honestly this dish reminds me of risotto (I know it’s not, don’t come for me😅)! ⁣
But it’s higher in protein and lower in cals… what’s not to love? Plus I had so much leftover for the whole week! ⁣

Ingredients

1/2 chopped courgette/zucchini ⁣
2 cups chopped kale ⁣
400g chicken breasts ⁣
300g light cream cheese ⁣
190g lift green pesto ⁣
200g rice ⁣
525ml chicken stock (or stock cube with water) ⁣
4 chopped garlic cloves ⁣
Salt + pepper ⁣

Method

  1. Add all ingredients to a pan.

  2. Bake for an hour at 180C/350F or until rice is cooked through. ⁣
