Banana Protein Muffins

The perfect way to use over ripe bananas!

Ingredients

-1 1/2 ripe bananas ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 large eggs ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 tbsp coconut oil ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 tbsp maple syrup ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/4 cup coconut flour (honestly it is so worth it to buy this!) ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/4 cup vegan vanilla protein powder (I use @sfnutrition) ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 tbsp baking powder ⁣⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 tsp salt ⁣⠀

Method

1. Mix dry and wet separately then combine. Make sure to not over mix as this could cause the coconut flour to dry out the batter.⠀⠀⠀⠀⠀⠀⠀⠀
2. Grease a muffin baking tray and add mixture baking at 170C/330F for about 12-17mins depending on your oven, or until a toothpick comes out clean from the centre. ⁣⠀⠀

3. Feel free to add dark chocolate chips, nuts, berries, etc! ⁣⠀⠀
